Spring 2020: while the rest of the world was busy hoarding toilet paper and failing at sourdough, the Pablo Ice Cream Bars crew was in a Lower Mainland laboratory staging a cold-blooded revolution. We took that weird, quiet blip in history to obsess over the art of the chill, engineering a menu of artisan paleta's so elite they make your childhood popsicle look like a sad, flavored ice cube.

Born in the 604 and bred with that unmistakable BC vibe, we didn’t just launch; we invaded. From the sun-baked southern boardwalks of White Rock and Crescent Beach to the high-altitude ego of Whistler, the white Pablo van became a beacon of hope for the heat-exhausted. We didn’t stop at the shoreline, either—we hopped the ferry to serve all 13 communities in the Capital Regional District (CRD) and then we trekked into the Okanagan Valley to show the wine country what real flavor looks like.
